What is the Best Fillet Knife?

Best Filet Knife

Fillet knives come in handy whenever you need to well… fillet something. I find that it is extremely important to invest in a good fillet knife because they are great for slicing thin strips of fish, chicken, steak, pork or whatever it is that you will need cut.

However fillet knives are primarily used on fish compared to other meats, although you can check out this post about the best chef knives to find a kitchen knife that can do it all. It’s an extensive post we did to shine some light on some of the top rated chef knives the market has to offer.

Anyways, these fillet knives listed below are all well designed and created and can help you out in the kitchen especially if you are needing to fillet fish.

So let’s dive into it!

The Best Fillet Knives to Instantly Slice Through Fish

Wusthof Classic 6-Inch Flexible Fillet & Boning Knife

Best Filet Knife

The Wusthof Flexible fillet & boning knife is one of the most premium fillet knives that comes with a lifetime guarantee, and it is dishwasher safe. The Wusthof tried and true and was put through extensive tests, which it was rated to have considerably higher sharpness and durability.

Secondly, the blade is high-carbon stainless steel which is honed by the manufacturer giving it the supreme sharpness that it has. It also is made to last, which means if you have the Wusthof it will last your 10, 20 years, as long as you use it for filleting.

Lastly, it had stability and grip in mind for the design of the knife. It has a traditional triple riveted handle which gives you a top notch feeling of comfort-ability and stability while using the Wusthof. You won’t have a doubt in your mind about losing your grip and the knife falling out of your hand while filleting with it.

Shun DM0743 Classic Gokujo Fillet and Boning Knife

best fillet knives

The Shun Gokuju fillet knife is made with extreme quality and craftsmanship. This is another top contender for being the best fillet knife, because it is known for being as sharp as a samurai sword (which are known for cutting almost anything in half) and is crafted with 32 layers of stainless steel giving it’s unique design as well as giving it the supreme durability and stain resistance.

The Shun doesn’t mess around and will fillet the skin/peels off of just about anything as quick as you can say “I ate ten gumdrops while walking to walkers wall.” ha. The Shun also comes with a limited lifetime warranty is dishwasher safe, however it is recommended to hand wash it so you maximize the durability of the knife.

Finally, it’s D-Shaped grip is smooth, and comfortable giving you complete control of your filleting movements. Do however keep in mind that if you like riveted handles, that this won’t fit your needs. But if you like the d-shape straight handles, then this is the best match for you!

Victorinox 47513 Flex Fillet Knife

Victorinox Flex Fillet knife

Victorinox has been in the knife making game for quite some time, and this is one of the top rated fillet knives on the market. This fillet knife is reasonably priced at $28, and gives you the most bang for your buck when it comes to fillet knives. So this is a great knife especially if you are on a low budget.

However don’t be fooled by it’s low price, because typically if you get a knife that is low priced it usually equates in having low quality… The Victorinox is the exception here. The blade of the knife is ice-tempered, high-carbon stainless steel which gives it the quality of having high durability and maximizing sharpness. On top of that, it has a lifetime warranty against manufacturer defects, don’t go around trying to cut wood with this or using it for things it isn’t meant for. You’re a smart person, right?

Lastly, it has patented fibrox handles that are textured to be slip resistant and fit in your hand very comfortably. The overall knife is simple and low priced and personally I think it should be charged more for the quality, but hey, getting a great knife for a low price isn’t bad at all.

Zwilling J.A. Henckels Fillet & Boning Knife

Best fillet knives

The Zwilling fillet knife is another strong competitor for being the top fillet knife, due to it having a razor sharp edge, and is created to give you extreme control over the angles that you cut at. When it comes to a fillet knife, you really want something that can cut extremely well, and gives you complete control.

Where does it get its sharpness? When Zwilling created this knife they made it in a process of creating a blade edge that was shaped by a laser so that it gets thee perfect angle and shape of the knife. On top of that ice hardened to make the knife more sturdy and increase it’s longevity. No need to worry about it breaking or bending. Finally it the knife is hand honed to give it even longer durability and sharpness.

Finally the grip is a triple-riveted Novodur handles, giving the knife even more durability, strength and control. Overall the Zwilling is design with high quality and sharpness.

Global G-21 Flexible Fillet & Boning Knife

Global G_21 Flex Fillet Knife

Last but certainly not least is the Global G-21 fillet knife, it is the most unique out of all the other knives that I mentioned, and is made with superb quality. The knife also has a lifetime warranty against defects and warranties. Which I think justifies the price at $79, think of it as an investment, you literally will not have to buy another fillet knife, unless you want two or more.

How sharp is it? So sharp it will cut your poultry right in half. The blade is formed from high-tech molybdenum/vanadium stainless steel, which is what gives it, its extreme sharpness and durability. The Global G-21 is made to last, and is rated with high durability. No longer will you have to buy another knife or waste a ton of time sharpening your knives.

But what about the grip and stability? The grip is formed in a d-shape form which is a straight handle, and is dimpled for giving you a firm and comfortable grip without losing your handle and dropping it. Nobody wants that. Don’t every worry about miss cutting again, or dropping your knife, because with the Global G-21 it will fit well in your hand and give you complete control.

Wrap Up

Overall, these are all really good fillet knives, however my favorite is the Shun; it has a clean and simple design that can easy fillet through fish and meat without any hassle. Giving you a seamlessly clean cut that doesn’t require much effort.

  • Hi,

Thanks for sharing this post. My own point of view, “Shun DM0743 Classic Gokujo Fillet and Boning Knife” is a great, lightweight boning knife. You will need to consider the upturned blade on this knife.
It may take a good session with it to get used to the upturned blade style. This knife is very sharp and holds it’s edge really well. Thank you…
