Fillet knives come in handy whenever you need to well… fillet something. I find that it is extremely important to invest in a good fillet knife because they are great for slicing thin strips of fish, chicken, steak, pork or whatever it is that you will need cut.

However don’t be fooled by it’s low price, because typically if you get a knife that is low priced it usually equates in having low quality… The Victorinox is the exception here. The blade of the knife is ice-tempered, high-carbon stainless steel which gives it the quality of having high durability and maximizing sharpness. On top of that, it has a lifetime warranty against manufacturer defects, don’t go around trying to cut wood with this or using it for things it isn’t meant for. You’re a smart person, right?

Lastly, it has patented fibrox handles that are textured to be slip resistant and fit in your hand very comfortably. The overall knife is simple and low priced and personally I think it should be charged more for the quality, but hey, getting a great knife for a low price isn’t bad at all.

The Zwilling fillet knife is another strong competitor for being the top fillet knife, due to it having a razor sharp edge, and is created to give you extreme control over the angles that you cut at. When it comes to a fillet knife, you really want something that can cut extremely well, and gives you complete control.

Where does it get its sharpness? When Zwilling created this knife they made it in a process of creating a blade edge that was shaped by a laser so that it gets thee perfect angle and shape of the knife. On top of that ice hardened to make the knife more sturdy and increase it’s longevity. No need to worry about it breaking or bending. Finally it the knife is hand honed to give it even longer durability and sharpness.

Finally the grip is a triple-riveted Novodur handles, giving the knife even more durability, strength and control. Overall the Zwilling is design with high quality and sharpness.

The knife also has a lifetime warranty against defects and warranties. Which I think justifies the price at $79, think of it as an investment, you literally will not have to buy another fillet knife, unless you want two or more.

How sharp is it? So sharp it will cut your poultry right in half. The blade is formed from high-tech molybdenum/vanadium stainless steel, which is what gives it, its extreme sharpness and durability. The Global G-21 is made to last, and is rated with high durability. No longer will you have to buy another knife or waste a ton of time sharpening your knives.

But what about the grip and stability? The grip is formed in a d-shape form which is a straight handle, and is dimpled for giving you a firm and comfortable grip without losing your handle and dropping it. Nobody wants that. Don’t every worry about miss cutting again, or dropping your knife, because with the Global G-21 it will fit well in your hand and give you complete control.

Overall, these are all really good fillet knives, however my favorite is the Shun; it has a clean and simple design that can easy fillet through fish and meat without any hassle. Giving you a seamlessly clean cut that doesn’t require much effort.

    Thanks for sharing this post. My own point of view, “Shun DM0743 Classic Gokujo Fillet and Boning Knife” is a great, lightweight boning knife. You will need to consider the upturned blade on this knife.
    It may take a good session with it to get used to the upturned blade style. This knife is very sharp and holds it’s edge really well. Thank you…
